Hazelnut Friands

Ingredients
300g (1½ cups) caster sugar
100g (1 cup) ground hazelnuts
100g (1 cup) plain flour
1 teaspoon vanilla essence
8 egg whites
150g butter melted and cooled slightly

Method
Mix sugar, hazelnuts and sifted flour. Whisk egg whites until stiff peaks form and fold gently into the hazelnut mixture. Add melted butter and vanilla essence and stir until well combined.

Grease friand or muffin tray. Spoon mixture into tray and fill to the rim. Bake in oven 200oC (400oF) for 25 minutes until friands are firm to touch and golden.

Cool on wire rack and dust with sifted icing sugar.

These are lovely to serve with mascarpone cream. Try mixing honey and cinnamon into the mascarpone!
