Buttermile Scones
Ingredients
450g plain flour
10 teaspoons baking powder
1 teaspoon salt
100g cold unsalted butter
50g castor sugar
300ml buttermilk
Method
Sift flour, baking powder and salt into a bowl. Rub in butter until the mixture resembles fine breadcrumbs. Add sugar and buttermilk and mix to form a soft dough.
Roll out dough on floured board to 1 inch thickness. Cut into rounds with a biscuit cutter or glass or simply cut into squares. Place on greased tray and brush with extra buttermilk.
Bake at 230oC (450oF) for 8-10 minutes, until golden brown.
When cooled, serve with jam and thick cream.
