Dark chocolate mousse cake

Ingredients
300g good dark chocolate (70% cocoa is best)
275g caster sugar
165g unsalted butter
pinch of salt
5 large eggs
1 tablespoon ground almonds plus extra for dusting the tin
1 pear
handful of pine nuts, toasted lightly
cinnamon
brown sugar

Method
Melt chocolate and butter over a pan of simmering water. Whisk in sugar and salt.

Whisk the eggs in with the ground almonds and fold into chocolate mixture.

Grease a springform pan and dust with extra ground almonds. Pour in cake mixture.

Gently lay thin slices of pear on the top of the cake. Dust with brown sugar and cinnamon and sprinkle with pine nuts. Bake in oven at 180oC (350oF) for 1 hour, centre should still be quite moist. Turn off oven and leave cake in oven to cool. This is a very moist, rich cake, lovely warm with a scoop of vanilla bean ice cream.
