Mint Julep

Ingredients
40g (2 cups) mint leaves
3 tablespoons honey
2 tablespoons lemon juice
500ml (2 cups) pineapple juice
250ml (1 cup) boiling water
500ml (2 cups) ginger ale
ice cubes
mint leaves (for garnish)

Method
Roughly chop the mint leaves and place in pan. Using the back of a wooden spoon, bruise the mint.

Add the honey, lemon juice, pineapple juice and boiling water. Mix well. Cover with tight fitting lid and leave for 30 minutes.

Strain and refrigerate until cold.

Just before serving, add the ginger ale and mix well. Serve in glasses over ice and garnish with mint.
