Delicious Sandwiches

Afternoon tea sandwiches are sliced diagonally or square into quarters. You can layer the sandwiches with different breads to make a classic club sandwich if you wish. Crusts are always cut off.

Here are four fabulous ideas for afternoon tea sandwiches:

Cucumber
Mix chopped dill with cream cheese and a little mayonaise. Spread on bread. Top with fine slices of peeled cucumber. (Pat cucumber on a paper towel first to avoid soggy sandwiches.) Please note: these are American style cucumber sandwiches, not to be confused with the English style which would never have cream cheese.

Goat cheese, fig, prosciutto & roquet
Mix soft goat cheese with a little pepper. Spread on bread and layer with slices of fresh fig, prosciutto and roquet.

Smoked salmon wasabi
Mix a little wasabi well into cream cheese. Spread on bread. Top with smoked salmon, grated lemon peel and chopped coriander.

Pear & stilton
Spread a little butter on the bread. Place on bread a layer of pear slices that have been sprinkled with lemon juice. Top with crumbled stilton cheese.
